Caramel Corn Recipe Gone Nutty! 

Caramel Corn Recipe with Pretzel

This is the time of year that I carve one of my favorite things POPCORN!  Don’t get me wrong I eat this light fluffy treat all year long but when Fall rolls around and it’s time for the Goblins and Goons to start knocking on the door my body screams for Caramel Corn either mixed with Cheddar Cheese to give me that signature Chicago Style taste or Crazy Nutty Caramel Corn. For the Crazy Corn just add a verity of nuts to any old everyday Caramel Corn Recipe,  my mix consist of almonds, cashews and pecans. In my mind I’m a connoisseur of popcorn since I’m an Iowa Gal just living life in the California Sun. I start my Crazy Caramel Corn Recipe off with a basic Caramel Corn Recipe and modified to make it my own.

Ingredients

• 5 tablespoons peanut or canola oil

• 1/2 cup popcorn kernels

• 1/2 tablespoon sea salt

• 1 cup sugar

• 1 cup brown sugar

• 1 cup butter (unsalted)

• 4 tablespoons light corn syrup

• ½ teaspoon baking soda

• Water, to cover

• 1/4 cup each almonds, cashews and pecans (unsalted or raw)

Directions

Heat oven to 250 and preparer a greased sheet pan and set aside.

In a large, heavy-bottomed pot, heat oil and kernels over high heat, uncovered, until first pop. Cover and shake until popping ceases. Sprinkle with salt and shake to distribute evenly. Measure 8 cups of popcorn, and reserve.

Place sugars, butter,  corn syrup in a saucepan and add enough water to cover and mix well. Cook until caramelized and golden. Remove from heat and stir in baking soda until mixed well. Immediately pour mixture over the popcorn and nuts then stir until all coated.

Back at 250 for 15 minutes, stir bake an additional 15 minutes, stir and bake 5 more minutes. Immediately spread on foil or waxed paper and cool for 30 minutes. Once cooled break up slightly into nice size clumps.

When I really want to get crazy I throw in additional ingredients, get creative with one or more of the ingredients below:

M&M’s, Pretzels Bits, Coconut Flakes, Mini Butterscotch, Marshmallows or Chocolate Chips. Heck I’ve even been known to throw all of these ingredients in a batch or two and top it off with a sprinkle of Cinnamon. My next quest will be to add Candied Bacon!  Be adventurous and have fun with it remember its Crazy Nutty Caramel Corn. 

Boy, how this reminds me of home!
